Minced Pork Rice (肉燥饭) combines rice and pork sauce in Tainan’s (台南) food culture. A 2020 city tourism account describes the local sauce as deep golden, with a savoury-sweet fragrance, and places this bowl at the centre of its pork-rice food event.
Meat sauce and separate rice grains
The culinary qualities highlighted by the city are fragrant pork that is fatty without feeling greasy, and white rice with individual grains able to absorb the meat juices. The simmering sauce supplies both the rice’s topping and much of the bowl’s flavour.
Different shops, different sauces
The city’s account emphasises individual shop recipes rather than a single fixed formula. At the December 2020 food event in Tainan, local cooks appeared alongside businesses from Yunlin (雲林), Chiayi County (嘉義縣), Chiayi City (嘉義市), Kaohsiung (高雄) and Pingtung (屏東).
