Toufen Douhuanping Pork Dumplings 头份斗焕坪水饺
Toufen Douhuanping Pork Dumplings is featured among the local specialties of Taiwan.

Douhuanping dumplings (头份斗焕坪水饺) are the boiled chive-and-pork dumplings of a Toufen shop opened in 1958 by a former army cook from Anhui — a place now better known for its scallion pancake.
How it is made
The filling is the Anhui inheritance: yellow chives rather than the green kind, minced with pork and wrapped in a plain wheat skin, then boiled and served without ceremony.
The kitchen also turns out three dishes the shop developed after it opened — a scallion pancake, hot-and-sour soup, and a mixed braise the menu calls 雜不囉嗦, literally 'no fuss'. None of them is a side note: locals order the pancake first and the dumplings second.
Flavour & texture
Yellow chives are milder and sweeter than green ones, with none of the sharp allium bite, so the dumpling tastes gentle and slightly sweet against the pork. The skin is thin and soft rather than chewy.
The scallion pancake is the opposite: flaky, layered, greasy in the right way and much richer than the dumplings. The hot-and-sour soup is sharp and peppery, and the mixed braise brings soy, star anise and offal into the meal.
Local roots & traditions
The shop was founded in 1958 by Yang Yong-gui, who had come to Taiwan with the Nationalist army from Anhui and had worked as a military cook. Comrades urged him to open his own place when he left the service, and he brought the old-style chive dumpling with him.
It has since been recognised twice over: a plate of 500 Bowls, Taiwan's street-food list, in the fourth round of voting, and the county government's congratulations for its ginger-shredded intestine, which the culture and tourism bureau calls a representative Miaoli dish.
Ingredients & dietary needs
Wheat flour, pork, yellow chives, salt and seasoning for the dumplings; the pancake is flour, scallion and oil. The 薑絲大腸, ginger-shredded pork intestine, is a separate order and contains offal.
Allergens: wheat and, depending on the dipping sauce, soy. The dumplings contain pork and are not vegetarian or halal. Ask whether the hot-and-sour soup uses pork stock if that matters to you.
How to order dumplings
Show 水餃 for the dumplings, 蔥油餅 for the scallion pancake, 酸辣湯 for hot-and-sour soup and 雜不囉嗦 for the braise. Dumplings are usually priced and ordered by the piece — ten is a light portion, twenty a meal.
The shop is a queueing destination on weekends and holidays, so arrive before noon or after two. Expect a wait for a table, and expect to share one.
How to eat it & plan a meal
Dip lightly: the filling is already seasoned, and the shop's soy and chilli will bury the chive flavour if you soak the dumpling. Eat the pancake first, while it is hot and crisp.
For two people, one pancake, twenty dumplings and a soup is a full meal. Add the ginger-shredded intestine only if everyone at the table eats offal.

Pork Ball Soup 貢丸湯 →
Pork ball soup is a bowl of springy meatballs in clear broth; Douhuanping's dumplings come boiled with a thin skin and a chive filling, and the shop is known as much for its scallion pancake as for them.
Questions before you order
What are yellow chives and why do they matter?
韭黃 is chive grown without light, so the leaves stay pale and the flavour turns mild and sweet instead of sharp. It is the Anhui part of this shop's inheritance and the reason the filling tastes gentler than most pork dumplings.
Is the shop only about dumplings?
No. The scallion pancake and the mixed braise are ordered at least as often, and the ginger-shredded intestine has its own reputation. Many tables order dumplings as a side rather than the main event.
