Skewered Tofu Snack (一串心) is a Yilan (宜蘭) snack assembled on a toothpick. Fried tofu provides the base, with a meat or offal filling and coriander or basil.

A choice of fillings

In its Dongshan (冬山) food guide, the Ministry of Agriculture (農業部)’s Rural Development and Soil and Water Conservation Agency (農村發展及水土保持署) describes versions with sausage, pork liver, pork-head skin, pig ears, chicken liver or chicken hearts. The fillings are combined with the tofu and herbs, then held together by a single toothpick.

Sauce and toothpicks

Diners add soy sauce or chilli sauce before eating. At the local stalls described by the agency, the toothpicks are counted afterwards to settle the bill.
