Minshi Shaobing (闽式烧饼) is a baked pastry found on Shamai Old Street (沙美老街) in Kinmen (金门). The county tourism description of the Minshi Shaobing (閩式燒餅) shop records both sweet and savoury versions, with crisp outer pastry and a soft interior.

Two fillings and shapes

The shop’s round savoury pastry uses hind-leg meat from Kinmen’s distillers-grain-fed pigs, local pearl scallions and a seasoning mixture. The pork is marinated with the shop’s own spices. Its long oval sweet pastry contains fine white sugar, leaving a granular texture in the filling. The pastry exterior is made without lard.

Breakfast and gifts

The Kinmen county government tourism website describes these hand-made, freshly baked pastries as an earlier local breakfast and a favourite of soldiers stationed on Kinmen. Soldiers carried them back to Taiwan, helping establish their role as a gift food. The same shop’s pastries can also be eaten cold.
