Clam Noodles (蚬子面) are a noodle soup from Dalian (大连), Liaoning, made with local clams. In Dalian the dish is cooked with fresh green beans as well, and the Liaoning Provincial Department of Commerce lists it as clam and green-bean noodles (芸豆蚬子面) among the province's ten famous snacks, calling it a representative Dalian dish.
Where it comes from
According to the Liaoning Department of Commerce, the dish was worked out in the early 1960s by the cook Zhang Jiawei (张家维) at the Xinhai Restaurant (新海饭店) in Pikou (皮口), Dalian, who set out to make a noodle dish suited to Dalian tastes using clams (蛤蜊, also called 蚬子) from the Zhuanghe (庄河) area. The department links its place on local tables to Dalian's position on a long coastline. In 2024 the department also listed Dalian clam and green-bean noodles (大连蚬子芸豆面) among Dalian's 27 entries in its 196 Liaoning landmark foods.

China Radio International's Liaoning service says the dish is made with good local clams, fresh tender green beans and smooth hand-rolled egg noodles.
