Tai'an Stewed Goose (台安炖大鹅) is a goose stew from Tai'an County (台安县) in Anshan (鞍山), Liaoning. Its cooking technique, listed as Tai'an goose cooking technique (台安大鹅烹饪技艺), was added to Liaoning's seventh batch of provincial intangible cultural heritage items, reported in January 2026 by the Liaoshen Evening News (辽沈晚报) and republished by the Liaoning Provincial Department of Culture and Tourism.
Where it comes from
The technique goes back to the big-pot cooking of the Fujia Commune (富家公社) canteen in Tai'an County in the 1960s. Its founder, Ren Bingxiang (任丙祥), then managed a production-team canteen and became known for iron-pot stews, with stewed goose as the canteen's signature dish. After his family moved to the county town he opened the Bingxiang Restaurant (秉祥饭店) with stewed goose as its main dish. Ren Shuai (任帅) of the Bingxiang Restaurant is the third-generation bearer, and the restaurant at Tai'an's western exit has grown from three single-storey rooms to a three-storey building of more than 2,000 square metres.
Before the provincial listing, a Liaoning Daily (辽宁日报) report of 2024 described Bingxiang stewed goose as a municipal-level intangible heritage item. In December 2024 the Liaoning Department of Commerce also named Tai'an stewed goose one of Anshan's dishes on its list of Liaoning landmark foods.
Ingredients
Ren Shuai says the restaurant uses free-range geese raised in Tai'an and one and a half years old, which drink from the Liao River (辽河) and feed on water plants, fish and shrimp. He credits this with meat that is tender yet firm to the bite. The canteen dish was remembered for its fragrant chunks of meat, rich but not greasy.
How it is eaten
Ren Shuai calls winter the best time for stewed goose, when the iron-pot version is in the highest demand. Before the Spring Festival the restaurant sells the goose in red vacuum-packed gift boxes, which one buyer told Liaoning Daily he was sending to friends in the south; after the municipal listing, Ren Shuai says, orders reached as far as Beihai (北海) in Guangxi.
