Perilla Leaf Grain Cakes (苏子叶饽饽) are a seasonal Manchu food associated with Fushun (抚顺). Also known as suhaozi (苏耗子), nianhaozi (粘耗子) or suye bobo (苏叶饽饽), they enclose a bean filling in sticky grain dough wrapped with a perilla leaf.
How it is made
The Ministry of Culture and Tourism’s Fushun food guide gives sticky sorghum or glutinous rice as the grain choices. The grain is soaked in water and ground into flour. Small beans are cooked and mashed into a paste for the filling, then enclosed in rounds rolled from the grain dough. Each parcel is wrapped in a perilla leaf and steamed.
Flavour and texture
The finished cakes are sweet and fragrant, carrying the fresh scent of the leaf. Beyond everyday eating, the ministry describes their use by Manchu people as offerings to deities.
