Korean Cold Noodles (朝鲜冷面) are a traditional food of the Korean peninsula. There, cold noodles are usually thought of as a dish of the north, of cities such as Hamhung (咸兴) and Pyongyang (平壤).
How it is made
The noodles are mostly made from buckwheat, although wheat noodles are also used. They are boiled until cooked and then seasoned with salt, vinegar, soy sauce and other seasonings. Tomato, cucumber and other vegetables are then added as accompaniments.
How it is eaten
As the name says, the noodles are eaten cold, with only a little broth. They are usually served in a bowl, and sometimes on a plate. Korean Cold Noodles are not only a hot-weather dish: Chinese Wikipedia says they are generally eaten in both summer and winter.
