Yixian Mutton Soup (义县羊汤) is eaten in Yixian (义县), Jinzhou (锦州), during the hot midsummer period as well as being a local soup speciality. CCTV’s July 2025 coverage follows a long-established restaurant serving a hot, pungently aromatic bowl to a steady stream of customers.
How it is made
At the restaurant, mutton and fat are combined with head meat, trotters, tongue and assorted offal. These ingredients are cut into strips and pieces, then stewed together for three hours in local mountain spring water. The cooking brings their savoury flavours into the broth.

CCTV describes the finished soup as savoury without a strong rank smell. The meat is tender while retaining texture, rather than becoming soft and limp.
