Gaizhou Xianbian Dish (盖州现编) is a layered dish of pork, pickled cabbage and seafood from Gaizhou (盖州), a county-level city of Yingkou (营口) in Liaoning. The Gaizhou city government writes the name as xianbian (线边), with different characters that are read the same way.

How it is made

The dish starts from an ordinary home-style plate, shredded pork stir-fried with pickled cabbage (肉丝炒酸菜). On top of that base the cook arranges oysters, dried shrimp, egg, laver and glass noodles, one layer at a time.

Yingkou News, in a report carried by the Gaizhou government, describes Gaizhou Xianbian Dish as bringing sour, fragrant and fresh-savoury flavours together in one plate, with a taste of its own.

Where it comes from

In 2024 the Liaoning Provincial Department of Commerce ran a province-wide review to name 'Liaoning landmark foods' (辽宁地标美食) under its 'Beautiful Markets, Beautiful Food' (美市美食) programme. Ten dishes put forward by Yingkou were recognised, each credited to one of its counties, cities or districts. Gaizhou had two on the list: xianbian and guoyourou (过油肉), a stir-fry of marinated pork slices that are first passed quickly through oil.
