Cypress-Wood Braised Chicken (柏木烧鸡) is a speciality of Lingyuan (凌源), in Chaoyang (朝阳). Its preparation combines simmering with repeated smoking over cypress wood, using locally raised roosters.
How it is made
At the 2024 Liaoning International Fair for Investment and Trade, Northeast News Network described the chicken displayed in the Chaoyang area. The birds are simmered with a proprietary seasoning mixture, then repeatedly smoked using cypress shavings placed in an iron pot.
Flavour and texture
The Liaoning Department of Commerce describes purple-red skin and meat that has some chew without being dry, with balanced saltiness and a pronounced aroma.
How it is eaten
The department also presents Lingyuan’s chicken as a gift for visiting friends and relatives or marking a festival.
