Suizhong Soft Tofu (绥中水豆腐) is a soybean speciality of Suizhong (绥中). Its county government describes a meal built around freshly made tofu, a savoury meat topping and sorghum rice, with each diner mixing a small dish of seasonings.
How it is made
The beans are soaked in cool or warm water until swollen, then ground finely. The resulting liquid is strained through a tofu cloth and boiled carefully: scorching gives the tofu a bitter taste. It is transferred to an insulated vessel and set with brine coagulant, a stage the county government identifies as crucial to the dish.
For serving, a basin and a willow strainer are placed on the table. The tofu is lifted into the strainer with a dedicated spoon.
How it is eaten
The accompanying seasonings include minced garlic, chopped fried red chilli, chive flowers and tender coriander leaves without their stems. A savoury topping, generally made with meat, is spooned into a small dish and mixed with the seasonings to taste. Diners then use chopsticks to transfer tofu into that mixture; sorghum rice supplies the staple alongside it.
