Bagong Mountain Tofu 八公山豆腐
Bagong Mountain Tofu is featured among the local specialties of Anhui.

Bagong Mountain Tofu (八公山豆腐) is a bean curd from Huainan (淮南) in Anhui, named after the Mount Bagong (八公山) area, which the Huainan municipal agriculture bureau credits with the best-quality tofu in the city.
How it is made
The curd is made from pure yellow soybeans and spring water from Mount Bagong. Farmers in the area have passed the tofu-making technique down through the generations, and many of them have mastered it. What they aim for is a curd that is fine, white, fresh and tender.
Flavour and texture
A good block of Bagong Mountain Tofu is translucent, described locally as white as a jade tablet and tender as congealed fat. The grain is fine and the curd is smooth and clean on the tongue, with no taste of the yellow whey drained from the curd, and it holds together without crumbling when lifted on the hand.
Cooked as a dish, the tofu turns golden, with a crisp outside, a tender centre and a fresh, savoury flavour.
Where it comes from
The Huainan agriculture bureau traces the tofu to the Huainan area and gives it more than two thousand years of history. China's national quality inspection authority (国家质检总局) approved Bagong Mountain Tofu as a geographical-indication product on 17 September 2008, and in September 2018 it was named one of Anhui's ten classic dishes in the "China Cuisine" (中国菜) selection.
