Fuyang Rolled Flatbread (阜阳卷馍) is a snack from Fuyang (阜阳) in north-western Anhui: several thin, soft round wrappers are stacked and rolled around bean sprouts and wheat gluten (面筋) lifted straight out of a simmering pot.
How it is made
The wrappers, called fenzi skins (粉子皮), are round, thin and soft. Several are spread out and laid one on top of another. Bean sprouts and wheat gluten are cooked in a pot kept on the heat, fished out, piled onto the stacked wrappers and rolled up. People's Daily Online describes Fuyang's juanmo as thin as a cicada's wing and able to roll up anything.

The first bite of Fuyang Rolled Flatbread is savoury and spicy, and the flavour stays on the palate afterwards.
Where it comes from
Fuyang lies north of the Huai River in wheat-growing country, where wheat-flour foods are the staple and mo (馍), the local breads, are a particular favourite. In 2023 Fuyang rolled flatbread was among the traditional craft items, most of them food-making techniques, on Fuyang's sixth list of municipal intangible cultural heritage. In 2024 it was named one of Fuyang's 'Ten Famous Breads' (十大名馍) in a selection run by the Fuyang catering and cooking association and the Fuyang tourism association.
Local reports single out the Tiansan Juanmo (田三卷馍) brand, which began with a vendor pushing a bicycle through the streets selling rolls and grew into a catering company with its own shops. In 2021 the Fuyang commerce bureau recognised the brand in its second batch of 'Fuyang Time-honored Brands' (阜阳老字号).
