Huoshan Air-Dried Mutton (霍山风干羊) is the air-dried mutton of Huoshan county in Lu'an, Anhui: 风干 means wind-dried, 羊 is sheep or goat, and the dish belongs to the mountain county's winter larder rather than to a fresh-meat menu.

How it is made

Air-drying is an old winter method across the mountains of central China: cut the meat into strips or joints, rub it with salt and sometimes chilli, hang it in cold, dry, moving air, and let time draw the water out. What is left is dense, dark and salty, with a stronger flavour than fresh meat.

Cooking is the second half: the dried meat is rinsed, soaked or blanched to pull out some salt, then simmered with ginger, chilli and often a root vegetable until it softens and gives the broth its depth. At home, cook it the day before if you can — the flavour improves overnight — and skim the fat before reheating. If it turns out too salty, add water and a piece of potato or radish, simmer, then discard the vegetable rather than the meat.
