Gongtan Mung Bean Noodles (龚滩绿豆粉) are handmade noodles from Gongtan (龚滩), an ancient town on the Wu River (乌江) in Youyang Tujia and Miao Autonomous County (酉阳土家族苗族自治县), Chongqing. The county government describes them as intangible cultural heritage of Gongtan and a well-known food across the border areas of Chongqing, Guizhou, Hunan and Hubei.
Ingredients and texture
The noodles are made from good-quality mung beans, soybeans and rice. The method is simple and quick, and the finished noodles are fragrant, soft and refreshing to eat. They hold a true colour, store easily without spoiling and are convenient to cook.
Where it comes from
Mung bean noodles are a traditional Tujia food and one of the dishes Gongtan residents like best. Farm households in Gongtan have made them by hand for a long time, and locals choose them for New Year and other festivals, for honoured guests and as gifts for family and friends.
On 8 April 2023 a Gongtan mung bean noodle workshop opened in the Wujiang-Gongtan tourist resort (乌江·龚滩旅游度假区). With its opening, visitors could eat freshly made noodles there, try the making process themselves and learn about the folk customs behind it. The resort, the county reports, is working to become a heritage creative-experience zone for south-eastern Chongqing.
