Rongchang Mutton Soup (荣昌羊肉汤) is a milky-white mutton soup from Rongchang (荣昌), Chongqing, which the district entered on its first list of district-level intangible cultural heritage items in 2008.
Flavour and texture
The broth is milky white and glossy, thick without an oily sheen, and strongly aromatic. The Rongchang district government stresses what it lacks: no gamy or fishy smell and no taste of medicinal herbs. The meat is fine and tender, and the soup is rich without cloying. The quality the district singles out is that the broth tastes of the meat and the meat of the broth, which it says soups from other places do not achieve.
Where it comes from
Mutton soup came to Rongchang as a Hakka (客家) dish. The district's own page for Rongchang Mutton Soup describes it through Panlong mutton soup (盘龙羊肉汤) from Panlong (盘龙) town in Rongchang, which it calls the product of cooking brought by migrants from Guangdong and Guangxi (两广) meeting local eating habits, refined by Panlong cooks over several decades.
Mutton-soup restaurants across Chongqing, and beyond it, almost all put the Panlong name on their shop signs to draw customers. Building on their masters' seasoning, Panlong cooks have also developed a range of mutton dishes: steamed, stir-fried, braised and in a hotpot.
How it is eaten
Rongchang Mutton Soup is winter food. Mutton comes into its own every winter, and on cold, quiet winter mornings in Rongchang a bowl of the steaming, milky soup is the way the day starts. Visitors to Panlong make a point of trying it.
