Wuxi Mountain Potatoes (巫溪洋芋) are the potatoes of Wuxi County (巫溪县), Chongqing, one of the county's main grain and cash crops and, according to the county gazetteer, widely grown there since the Qing dynasty.
Flavour and texture
The Chongqing local chronicles office describes the tubers as smooth-skinned, pale yellow with a grey cast and slightly glossy, with a smooth, pale yellow cut surface. Steamed or boiled, they are soft, fine and slightly waxy, with a light fragrance. The office links these qualities to the county's vertically stacked terrain, potassium-rich soils, plentiful clean water, altitude-layered climate, ample sunshine and wide gap between day and night temperatures.
Where it comes from
The Wuxi County Gazetteer (巫溪县志) records potatoes as widely grown in the county since the Qing dynasty and gradually becoming a staple of farm households. Together with maize and sweet potato they were known as the county's "three big lumps" (三大坨).
Among the crop's recorded titles, the chronicles office lists entry in the national catalogue of famous, special, high-quality and new agricultural products (国家名特优新农产品名录), and notes that the Ministry of Agriculture recommended Wuxi Mountain Potatoes as Chongqing's only product for the China–EU list of mutually recognised geographical-indication agricultural products.
How it is eaten
Shredded potato, potato slices, steamed potato and roasted potato are everyday dishes in Wuxi. The county's own list of local foods also includes kang yangyu (炕洋芋), potatoes slowly pan-roasted with little oil.
