Xiushan Rice Tofu (秀山米豆腐) is a well-known snack of Xiushan Tujia and Miao Autonomous County (秀山土家族苗族自治县), Chongqing, made mainly from rice and lime.
Ingredients
The county names rice and lime as the two main raw materials. Japonica and glutinous rice are too sticky and hard to work with, so makers prefer indica rice from the early, middle or late crop, or broken rice. For the lime, freshly made lime is considered best.

The county government describes Xiushan Rice Tofu as a food the people of Xiushan created over long everyday practice, with a long history, a distinctive method and a fresh, pleasant taste. It is known as a local snack both in Xiushan and in the surrounding area.
