Youyang Mawang Duck (酉阳麻旺鸭) is a small local duck breed raised in Youyang Tujia and Miao Autonomous County (酉阳土家族苗族自治县), Chongqing. It shares its name with Mawang Town (麻旺镇), the breed's place of origin. The mature birds are recommended for old-duck soup and braises, and the eggs are sold too.
Where it comes from
The Mawang duck has been selectively bred in the area for more than two hundred years. It is a small laying breed: smaller than an ordinary duck, it starts to lay at about three and a half months. In 2009 the former Ministry of Agriculture recognised it as a national-level livestock and poultry genetic resource, and it also carries national geographical-indication status. Miwang Village (米旺村) in Mawang Town keeps a duck-rearing demonstration base where the birds are raised and their eggs collected.
Ingredients
The old ducks that Miwang Village offered for sale in 2023 had been raised for a year and a half to two years. A live duck weighed about 3 jin (roughly 1.5 kg) and about 2 jin (1 kg) once dressed. The meat is described as fresh and tender.
How it is eaten
The birds are recommended above all for old-duck soup (老鸭汤) and for red-braised duck with konjac (红烧魔芋鸭), duck stewed in soy-based sauce with konjac jelly. In 2021 the county was building up Youyang konjac duck (酉阳魔芋鸭) as a signature dish, which Miwang Village saw as a chance to make its Mawang ducks better known. The village has also tried processing the birds into pressed, salted duck (板鸭).
