Xiamen bao bing is a fresh, soft roll built from a thin wrapper and a finely cut cooked filling. The official recipe combines cabbage, carrot, bamboo shoot, firm tofu and pork, with peas and garlic greens added during cooking. The vegetables and meat are cooked together with broth until the filling becomes tender and cohesive, then reduced so it can be wrapped. This is a different structure from a crisp fried spring roll: the wrapper stays pliable and the interior contains many small pieces.
