Mazu Noodles (妈祖面) are associated with wishes for peace, good fortune, health and a long life. In Putian (莆田), they are also called longevity noodles, and a generously topped bowl is a way to welcome guests as well as mark the New Year.

A generous set of toppings

Putian restaurateur Fang Zhizhong (方志忠) describes hosts adding some of the best food in the house: stir-fried pork-belly slices, fried seaweed, fried peanuts, a fried egg and braised shiitake mushrooms.

A family welcome

Speaking to Yangcheng Evening News, Fang recalls longevity noodles as the first meal on the first day of the lunar year, eaten by young and old alike. He also recommends this dish as a meaningful meal to cook for a mother, drawing on its place in Putian family hospitality.
