Shouning Rice Cake 寿宁米糕
Shouning Rice Cake is featured among the local specialties of Fujian.

Shouning Rice Cake (寿宁米糕) is a cake of cooked rice batter eaten with a salty meat broth, which the Shouning County (寿宁县) government in Ningde (宁德), Fujian, describes as a food found only in Shouning. Together with rice porridge, it is one of the main breakfasts of the county.
How it is made
The main ingredient is rice, ground into a batter with a purpose-built machine. The batter is cooked into a plain white cake, called baigao (白糕). What seasons it is gao tang (糕汤, "cake broth"), a house-made broth based mainly on meat stock with many seasonings added, which tastes salty and fragrant.
The second kind, caigao (菜糕), starts from the finished white cake, which is wrapped around a filling of shredded carrot, cabbage and pork.
How it is eaten
Plain baigao needs only a few spoonfuls of gao tang poured over it before it is eaten, and it is the breakfast local people like best. On the Double Ninth Festival (重阳节) eating rice cake is an inherited custom in Shouning, and people come from other places to try it.
