Savoury Mixed Rice (咸饭) in Quanzhou (泉州) brings rice and other ingredients together in one dish. It is a family of preparations: mustard greens, cabbage, taro and crab all appear in local versions, while radish rice combines a vegetable crop with pork and seafood.
Radish rice from Shishi
Quanzhou Evening News describes a version using tender, sweet radishes from the sandy soil of Daxia Village (大厦村), Shishi (石狮). These cook with skin-on pork that is eight parts fat to two parts lean, plus shiitake mushrooms, oysters and dried shrimp.
Rice steamed in a small pot
Another form is huzai fan (壶仔饭), a savoury glutinous-rice preparation associated with Shenhu (深沪) in Jinjiang (晋江). Pork belly, mushrooms and dried shrimp line the bottom of a small earthenware pot. Stir-fried glutinous rice is added and steamed with bone broth. The cooked rice is turned out into a bowl and finished with spring onion, peanuts and braised-pork gravy.
