Chaoshan Raw Marinated Seafood (潮汕生腌) is shellfish and other seafood from the Chaoshan (潮汕) coast of Guangdong that is marinated and eaten without cooking.
Where it comes from
Chinese Wikipedia explains Chaoshan cooking through the coast: the region lies by the sea, fishing is well developed, and seafood turns up at almost every meal, with braised dishes (滷味) as the other local passion. Its list of late-night foods puts raw-marinated blood cockles (生腌血蚶), mantis shrimp (生腌虾蛄), crab (生腌蟹) and clams (生腌蚬) among the main dishes of Chaozhou night congee (潮州夜粥), a meal usually sold from open-air food stalls in Chaoshan, Hong Kong, Shenzhen and Guangzhou. The same stalls serve oyster omelette, braised duck and goose, and Puning dried tofu (普宁豆干).
How it is eaten
A Chaozhou Daily (潮州日报) report on the city government portal about the October 2023 holiday sketches the food day of visitors: a plate of rice noodle rolls in the morning, beef hotpot at midday and Chaozhou raw-marinated seafood in the evening. The city's market regulator has published a notice on raw fish and raw-marinated seafood, calling them fresh-tasting and popular with visitors from across the country. It warns that marinating in high-proof liquor, sesame oil, soy sauce, mustard or vinegar does not reliably kill parasites, and that drinking spirits or white vinegar after eating raw seafood does not kill bacteria or parasites either.
