Fengshun Rice-Sheet Rolls (丰顺捆粄) are thin sheets of steamed rice batter rolled around a savoury filling, and a Meizhou Daily report names them the representative breakfast of Fengshun County (丰顺县) in Meizhou (梅州), Guangdong. The same report calls speed their defining trait: from batter to finished roll, a practised cook takes under thirty seconds.
How it is made
Rice is soaked for two hours, washed, drained and ground into a smooth batter. The cook ladles batter out, steams it into a sheet, spreads the filling over it and rolls it up. The sheet has to come out thin but resilient so that it can hold the filling without splitting. CCTV's food programme Flavour (味道), which featured the Fengshun dish in a 2018 episode, names the amount of batter, the timing, the heat and the force applied as the things a cook must control to get a sheet that is both thin and chewy.
Ingredients
Fillings range widely and are often combined; pork, salted pickled greens (咸菜), garlic chives and dried tofu are among them. The cooked sheet is so translucent that the filling shows through it.
Where it comes from
Fengshun's cooking mixes Hakka (客家) and Chaoshan (潮汕) habits, and a 2023 Meizhou Daily essay on the county's culture traces the breakfast roll to guanjian (管煎), an older New Year food in which tofu skin was wrapped around a vegetarian filling into a roll, steamed and kept ready. The Fengshun County Justice Bureau has named its approach to settling disputes the "kunban mediation method", comparing a mediator's groundwork to a sheet that tears if it is uneven.
