Gongming Roast Goose (公明烧鹅) is a roast goose from Gongming (公明), a subdistrict of Guangming District (光明区) in Shenzhen. The Guangming District culture, radio, television, tourism and sports bureau lists it among the district's traditional products and describes it as a traditional handmade specialty of Shangcun (上村) in Gongming.

Where it comes from

According to the district bureau, Chen Abao (陈阿煲) of Loucun (楼村) created Gongming Roast Goose in 1939, and at a national goods-exchange fair in 1952 it was praised as a famous-brand specialty product.

Flavour and texture

The finished goose is a bright golden colour. Its skin is crisp and tender, and the meat is fatty without being greasy, with a strong, rich aroma.

How it is eaten

In Gongming the goose is usually paired with lai fen (濑粉), a local rice noodle. The noodles are blanched and put in a bowl, topped with a layer of crisp-skinned roast goose and finished with stock; the combination is also called "golden goose, silver noodles" (金鹅银濑). Shenzhen News describes a bowl of roast goose lai fen as a childhood taste for many people and a bowl that lai fen fans make a point of eating when they come to Gongming.
