Huidong Sea Urchin Fried Rice (惠东海胆炒饭) is a seafood fried rice from Huidong County (惠东县) in Huizhou (惠州), Guangdong, known locally as the "dancing" (会跳舞的) sea urchin fried rice. The Huidong County government calls it a food calling card of Huizhou's seaside tourism.
Ingredients
The dish is built on two local products: farm-grown rice from Xunliao Bay (巽寮湾) and local sea urchin. The Huidong County government gives May to June and September to November as the seasons when sea urchin is at its fullest; fresh sea urchin roe comes in thick, orange-yellow lobes with a sweet, tender and smooth taste.
How it is made
The rice is steamed first. After steaming it is given a treatment called "gold wrapping silver" (金包银), which leaves the rice fragrant and loose, with every grain separate. In 2021 the CCTV-10 food programme Weidao (味道), in an episode on home-town dishes of Huizhou, filmed a chef cooking the "dancing" sea urchin fried rice.
Where it comes from
Huidong Sea Urchin Fried Rice was among the dishes shown at Huizhou's second food festival of its districts and counties, organised by the Huizhou Chefs Association (惠州市厨师协会) in December 2019. The county government lists honours including recognition as a Huizhou tourism specialty food and as one of Huizhou's ten famous dishes.
