Luoding Black Bean Chicken (罗定豆豉鸡) is a Cantonese dish from Luoding (罗定) in Yunfu (云浮), Guangdong, in which Luoding's home-reared three-yellow chicken (三黄鸡) is cooked with the town's own fermented black beans (豆豉).

Ingredients

The Guangdong provincial government's food page says the dish must be made with home-reared Luoding three-yellow chicken, whose meat is tender and its skin smooth, rich without being greasy. The beans must be Luoding fermented black beans, which the same page ranks among the best of their kind: fragrant, loose and crumbly, and appetising. Southern Daily adds that Luoding's black beans have been made for a century and have a full, mellow flavour. Ginger, steeped scallion sections and garlic go in with them.

How it is made

Two things are singled out in the cooking. The first is enough heat, so that the aroma of chicken and beans comes through fully. The second is knife work: the bird is cut into pieces judged so exactly that a little smaller would be too small and a little larger too large, each one sized for a single mouthful. Southern Daily credits the balance of ginger, scallion and garlic with drawing out both the freshness of the chicken and the depth of the beans.

Where it comes from

Luoding has long grown beans and raised chickens, and the dish joins the two. It is an everyday dish among local people and part of how Luoding people remember their town, and its reputation has spread across China and abroad. A Southern Daily commentary credits its appearance on CCTV (央视) to its flavour and to the technology that turned that flavour into an industry. It is now also made as a prepared dish. In 2021 a Luoding industrial park built around the dish, covering chicken farming, soybean growing and processing, was named in the first batch of recommended provincial-level modern agricultural industrial parks for special industries.
