Seafood Rice Noodles (海鲜粉) are rice noodles cooked together with seafood, a traditional noodle dish that People's Daily Online describes as a snack of the Beibu Gulf (北部湾) coast and of coastal Southeast Asia. Fangchenggang (防城港), a Guangxi city on the Beibu Gulf, promotes its own version as Fangchenggang seafood rice noodles.
Flavour and texture
Both People's Daily Online and China Daily say the Fangchenggang version is liked for its fresh, savoury taste and for noodles that are smooth, supple and springy.
Ingredients
China Daily notes that the waters off Fangchenggang yield a wide range of fish, prawns, crabs and shellfish all year round, and that the city is one of Guangxi's main sea-fishing grounds. The city's plan for the dish also names the related aquaculture and farming it wants to develop: prawns, large oysters, squid, golden pompano and sea snails, together with rice, sea red rice and sea-duck eggs.
Where it comes from
In September 2021 the Fangchenggang committee of the Chinese People's Political Consultative Conference surveyed the city's seafood-noodle trade and sent a study group to Liuzhou (柳州) to learn from its rice-noodle industry. On 16 October 2021 two food companies made a trial run of the first bagged Fangchenggang seafood rice noodles. The packaged versions come in quick-cook and instant forms and contain dried rice noodles, cooked seafood, a seafood soup base and seasoning.
