Jishiteng Herbal Sweet Soup (鸡屎藤糖水) is a sweet soup from Beihai (北海), Guangxi: strips of dough made with the juice of jishiteng (鸡屎藤) vine leaves, boiled with sugar and sliced ginger. The Beihai city government describes eating it at the Sanyuesan (三月三) festival as a custom particular to Beihai.

How it is made

The leaves are picked and washed, then pressed for their juice. The juice is kneaded into a dough, and the dough is cut into strips, which Beihai calls jishiteng he (鸡屎藤籺). The strips are then boiled with sugar and slices of ginger, and the finished bowl is the sweet soup, jishiteng he tangshui (鸡屎藤籺糖水).

Where it comes from

Sanyuesan, the third day of the third lunar month, is a traditional festival of Guangxi's ethnic minorities and is kept as a Zhuang (壮族) festival. The Beihai city government calls the jishiteng strips a seasonal festival food distinctive to Beihai people. At a Sanyuesan cooking session reported on the city portal, staff of the Beihai Health Supervision Institute made the strips alongside steamed glutinous rice.
