Lingshan Giant Rice Dumpling (灵山大粽) is a large zongzi from Lingshan County (灵山县) in Qinzhou (钦州), Guangxi, filled with chestnut, dried shrimp and pork. The Lingshan county government lists it among the county's named local products and calls it a long-established folk snack and a gift food.

Ingredients

The county government gives the ingredients as Lingshan's Longyuan (龙渊) wild glutinous rice, wild zongzi leaves for the wrapping, chestnut, dried shrimp and pork. The dumpling is made by a traditional folk technique, and the county presents it as a product with ethnic character.

How it is made

The Qinzhou Municipal Bureau of Culture, Radio, Television, Sports and Tourism (钦州市文化广电体育和旅游局) says the dumplings are slowly simmered for 10 hours over a fire of fruitwood. The bureau adds that the dumpling is now widely known and sold outside the area.

Flavour and texture

Both official descriptions call it rich without being greasy ("肥而不腻"). The county adds that the rice is glutinous without turning mushy ("糯而不糊"); the Qinzhou bureau says it is glutinous without being gluey and leaves a fragrance after each bite ("糯而不黏、过齿留香").
