Youjiang River Fish (右江河鱼) are the fish of the Youjiang (右江), the river that People's Daily Online's Guangxi channel calls the mother river of Baise (百色). The outlet names "Youjiang river fish in one pot" (右江河鱼一锅鲜), in which several kinds of Youjiang fish are braised together in a single pot, as the classic among Baise's river-fish dishes.
Ingredients
People's Daily Online (人民网) names the fish that go into the pot: lan dao yu (蓝刀鱼, "blue knife fish"), catfish (鲶鱼) and yellow-headed catfish (黄颡鱼), among other Youjiang species.
Flavour and texture
In the one pot the flavours of the different fish build on one another. The broth is clear, sweet and mellow, and a mouthful is meant to carry the fresh taste of the Youjiang itself.
Where it comes from
On 21 October 2025 the Guangxi and Baise catering associations held a Baise food selection, judged on taste, texture, presentation, colour, character and reputation by panels of experts, media and diners. Youjiang river fish in one pot was one of the 20 dishes chosen as representative Baise specialities. Another was the Chengbi Lake (澄碧湖) big fish head, which People's Daily Online presents as the classic of Baise's lake fish, as the one-pot dish is of its river fish.
