Sticky Rice (糯米饭) in Guiyang (贵阳) is glutinous rice fried with lard and soy sauce and then wrapped around a mix of toppings. Guiyang Civilisation Net (贵阳文明网) names it beside changwang noodles (肠旺面), sour fish soup (酸汤鱼) and siwawa (丝娃娃) as one of the city's foods, and describes it as fragrant and soft.
Ingredients
The rice is first stir-fried with lard and soy sauce. It is then wrapped around a mix of fillings: cuishao (脆哨), the crisp fried pork pieces of Guizhou, shredded potato, pickled radish, chilli oil (油辣子), shredded kelp, peanuts and white sugar, with bean flour (豆面) or tianyinzi (甜引子).
Flavour and texture
The fried rice is sticky and fragrant on the tongue, and the fillings bring sour, sweet, salty and hot flavours together in the same mouthful.
Where it comes from
Guiyang Civilisation Net ties the dish to named shops in the city's streets and lanes and counts them as part of the memory of old Guiyang. Its examples are Mao Ayi (毛阿姨) at Liuguangmen (六广门), the Wang family shop (王记) on Yinghua Lane (樱花巷), the Guo family shop (郭记) on Zhengxin Street (正新街) and the Zhang family shop (张记) on Dongshan Lane (东山巷). In high summer 2026 the Guiyang culture and tourism bureau listed sticky rice among the Guizhou snacks sold around the potato stalls of the Minsheng Road snack street (民生路小吃街).
