Capon and Fresh Tofu (骟鸡点豆腐) is a Dafang (大方) hotpot dish in which shredded chicken is incorporated into freshly set tofu. The capon is a male chicken castrated before it begins to crow. Chicken bones become stock, while the meat goes into the soy milk before the curds form.
How it is made
The Dafang preparation uses local soybeans and well water for the soy milk. After the milk reaches a boil, the heat is reduced and shredded chicken marinated with ginger is added. Once the meat is cooked, sour liquid is used to coagulate the milk into chicken-filled curds. These are pressed into shape, then cut into blocks.
How it is eaten
Bean sprouts line the serving pot, with the tofu arranged above them and chicken stock poured over it. The finished tofu combines a pronounced soybean flavour with the savouriness of chicken and a smooth texture. A chilli dipping sauce accompanies the hotpot; its ingredients include fermented black beans, wheat sauce, minced meat, ginger, bitter garlic, scallions and salt.
