Fushan Coffee (福山咖啡) comes from Fushan (福山) in Chengmai (澄迈), where coffee is part of everyday eating as well as cafe culture. Some residents still roast and grind their beans by hand. In older households, coffee appears alongside sweet potatoes, cassava, bread or fried dough sticks.
Where it comes from
The local coffee story begins with Chen Xianzhang (陈显彰), an overseas Chinese from Indonesia. After visiting the area in 1933, he established Fumin Farm (福民农场) in Daji village (大吉村) in 1935 and successfully introduced coffee trees. Coffee growing went through periods of decline and revival, with renewed development in the 1980s.
How it is made
Interviewed at Fuli Coffee (福礼咖啡), Wang Hongjian (王宏健) describes using a siphon brewer to bring hot water and ground coffee together through steam pressure. He recalls a simpler household method from his childhood: earlier generations in his family boiled coffee in a large pot, then kept it in pottery jars or kettles and drank it with sweet potatoes.
How it is eaten
Another local accompaniment is coffee cake, a translucent sweet made with coffee powder, coconut powder, starch and sugar. The cake became widely popular from the 1990s and is a characteristic snack in Fushan and Chengmai.
