Cangzhou Chicken Hotpot (沧州火锅鸡) is chicken served as a hotpot in Cangzhou (沧州), Hebei. Hebei News Network (河北新闻网), the news site of the Hebei Daily (河北日报) group, writes that taking in the Grand Canal scenery and eating hotpot chicken has become the standard pairing for visitors to the city.

Flavour and texture

Hebei News Network describes the chicken as fragrant right through to the bone, and hot without being harsh: its phrase is "辣而不燥" (spicy but not fiery). The chicken comes with a small dip made from garlic paste and vinegar, and after a few mouthfuls, the site says, the mouth is full of a numbing, fragrant taste.

How it is eaten

A Hebei Daily photograph from 13 August, used with the site's October 2025 food round-up, shows Cangzhou residents eating at a hotpot chicken restaurant in the city. The round-up places the dish beside two other Cangzhou foods, the Hejian donkey meat burger (河间驴肉火烧) and sheep intestine soup (羊肠汤), and suggests a bowl of the soup after the chicken.
