Dingzhou Menzi Pork Sausage (定州焖子) is the pork menzi of Dingzhou (定州), Hebei, a stuffed sausage that also goes by the name "肉灌肠" (meat sausage).

How it is made

Beijing Tourism Network (北京旅游网), run by the publicity centre of the Beijing Municipal Bureau of Culture and Tourism, says in its guide to Dingzhou food that the menzi is made by filling casings with selected lean pork and a starch flour made in Dingzhou from shanyao (山药粉面). The site says it tastes good because of those two ingredients: the result is neither fatty nor cloying, and strongly aromatic.

Flavour and texture

A separate entry in the same guide sets Dingzhou's own menzi well apart from the kind sold in Baoding (保定) city. It says there is a lot of meat in it and that it is springy to eat; once warmed through it turns a little sticky while the meat keeps its chew, and plenty of sesame oil and similar seasoning goes into it.
