Huiji Mung Bean Cakes (回记绿豆糕) are the mung bean cakes of the Huiji pastry shop in Shanhaiguan (山海关), Qinhuangdao (秦皇岛), Hebei, a speciality Shanhaiguan is well known for.

Where it comes from

The shop dates from 1945. Its founder belonged to the Hui (回族), a Muslim ethnic group, and that is why people call it Huiji (回记), "the Hui shop". In July 2019 Shanhaiguan Huiji Pastries (山海关回记糕点) was one of five Qinhuangdao entries announced for Hebei's second list of protected Yan-Zhao time-honoured brands (燕赵老字号), a batch of 89 across the province. The listing programme was organised by the China Time-Honoured Brand Culture Research Centre (中国老字号文化研究中心), the Hebei Federation of Literary and Art Circles and a provincial folk-heritage committee, to protect and pass on old brands and their products.

Ingredients, flavour and texture

According to Beijing's municipal tourism site, both the mung beans and the white sugar in the cakes come from the local area, and they are made to a recipe handed down in the family. The same account describes them as melting in the mouth, with a very fine, smooth texture.
