Anyang Flat Starch Noodle Soup (安阳扁粉菜) is a breakfast built around sweet-potato starch noodles, greens, tofu and pork blood curd, simmered together in a large iron pot. In Anyang (安阳), a bowl commonly comes with flatbread, while chilli oil adds a bright red finish to the broth.
Noodles in a rich broth
The Henan (河南) Department of Culture and Tourism describes a rich, full-flavoured liquid carrying the aromas of the different ingredients. Smooth, springy noodles contrast with tender pork blood curd and fresh greens. A spoonful of chilli oil is part of the familiar combination.
At the breakfast counter
Anyang Integrated Media’s visit to Zhangde Bianfen Cui (彰德扁粉崔) on Wenming Avenue (文明大道) found stock kept warm over low heat, with dark-red blood curd, white tofu and small Chinese cabbages in the pot. Customers ordered a bowl with bread and asked for extra chilli before the owner ladled it out. A student interviewed there had returned for this breakfast on his second day home.
