Beiwudu Hulatang Peppery Soup (北舞渡胡辣汤) is a local soup tradition of Beiwudu (北舞渡) in Wuyang County (舞阳县), Luohe (漯河). Beef and mutton versions are both made there. Xinhua describes meat aromas rising with the fragrance of pepper, while local food historian Jia Guangxing (贾广兴) characterizes the style as moderately spicy and gentle on the palate.

Soup shops line the town’s streets, including businesses run by the Shan (闪), Ding (丁), Li (李) and Wan (宛) families. Packaged versions can also be taken home.
A trading town’s soup
The town was a transport junction during the Ming and Qing dynasties, when pepper and other spices were distributed through its river trade. Xinhua connects the soup’s local development with boatmen needing a filling, quick meal. Shan Guoyu (闪国雨) dates his own family’s business to 1879; earlier generations sold soup from carts at markets before later opening breakfast shops.
