Biyang Donkey Meat (泌阳驴肉) is the five-spice donkey meat (五香驴肉) of Biyang (泌阳) in Zhumadian (驻马店), Henan, which Zhumadian Net (驻马店网), the news site of the Zhumadian Daily group, lists among Biyang's specialty foods.

How it is made

Makers use the lean red meat of Biyang donkeys (泌阳驴) and season it with more than ten flavourings. Among those Zhumadian Net names are clove, amomum (砂仁), sesame, cassia bark, tsaoko (草果), white sugar and cooking wine.

The seasoned meat is cured in a mud pit (泥池腌制) and then cooked, and the finished meat is vacuum-packed and sterilised at high temperature.
