Dengzhou Wozi Dressed Noodles 邓州窝子面
Dengzhou Wozi Dressed Noodles is featured among the local specialties of Henan.

Dengzhou Wozi Dressed Noodles (邓州窝子面) are a breakfast noodle of Dengzhou (邓州) in Henan: Wuhan hot-dry noodles (热干面) reworked with mung-bean sprouts, diced beef and chilli in beef tallow.
How it is made
The Dengzhou city government describes wozi noodles as Wuhan hot-dry noodles that were improved after they reached Dengzhou. The local additions are mung-bean sprouts and diced beef, with chilli in beef tallow (牛油辣椒) poured over the top, and the city calls the result fragrant and spicy.
The city government's page on the dish also retells the origin story of the Wuhan parent dish: a Hankou (汉口) noodle seller in the early 1930s boiled and drained his unsold noodles, spilled sesame oil over them by accident and mixed it through. The next morning he dipped them briefly in boiling water, drained them into a bowl and added his seasonings, and the dish was named hot-dry noodles.
Where it comes from
According to the Dengzhou city government, the noodles most likely reached Dengzhou from Laohekou (老河口); when that happened has not been established. The city government adds that Dengzhou's wozi noodle shops are doing ever more business and that the bowl is now one of the breakfasts many people in Dengzhou choose first.
How it is eaten
The city's advice is to order a bowl of beef soup alongside and drink it between mouthfuls, so that the dressed noodles do not feel oily. Eating them on their own, without the soup, is also fine.
