Guangshan Salted Speckled Duck Eggs (光山麻鸭蛋) are the salted eggs of the speckled ducks of Guangshan County (光山县) in Xinyang (信阳), Henan, where the county government counts them among its ten treasures.
The duck behind the eggs
The Guangshan county government names the eggs one of the ten treasures of Guangshan (光山十宝) and records them as a product with geographical-indication protection. It introduces its salted speckled duck eggs (咸麻鸭蛋) with a rhyme: each place's land and water raise their own ducks, Guangshan's ducks are first-rate, and what they are good for is their eggs, their down and the handsome speckled ducks themselves.
Where they come from
The county points to its old gazetteers. The Guangshan County Gazetteer (光山县志) of the Ming Jiajing reign (嘉靖) records a saying handed down from long ago that Fuguang (浮光) has many fine ducks, and the gazetteer of the Qing Qianlong reign (乾隆) uses the phrase "Gu geese, Guang ducks" (“固鹅光鸭”), pairing the ducks of Guang with the geese of Gu.
From the 1980s, Guangshan speckled ducks and their eggs became products supplied to Hong Kong, and the county government describes them as long well known in China and abroad.
