Unflipped Rice Pancake with Egg (鸡蛋不翻儿) is a Jiyuan (济源) snack with a golden egg layer above a pale grain-flour base. Its distinctive shape resembles a Qing official’s hat, with a thin, crisp centre and a thicker outer edge.
Egg and grain batter
Henan Daily describes a mixture of egg, rice-flour batter, corn-flour batter, millet-flour batter and Chinese chives. The pancake is cast into shape in one pour during cooking. It does not need the repeated turning used for an ordinary griddle cake, which explains the name bufanr (不翻儿), or “not flipped”.
A name linked to the river
Henan Daily also recounts a river tradition behind the name. Jiyuan lies near the Yellow River’s (黄河) last exit from the mountains, where the water was feared by fishermen. The portable food’s reassuring name expressed a wish that their boats would not overturn.
The same newspaper describes returning Jiyuan residents buying a couple to eat while hot.
