Luoguo Sauce-Braised Meat 罗锅酱肉
Luoguo Sauce-Braised Meat is featured among the local specialties of Henan.

Luoguo Sauce-Braised Meat (罗锅酱肉) is a Xinxiang (新乡) pork speciality associated with Luoguoju (罗锅居). Pork belly is a preferred cut, slowly cooked in an aged spiced stock until the meat is glossy red and tender, with a pronounced five-spice fragrance.
Pork and seasoned stock
Xinxiang Daily (新乡日报) describes careful selection of fresh pork, followed by deboning, removal of hair and trimming into shape. Star anise, cassia and cloves are among the seasonings. The meat then cooks gently in the shop’s seasoned stock for several hours.
The finished fat is described as rich without cloying heaviness, while the lean meat stays moist. Alongside belly pork, the shop’s established range includes square-cut pork and pork-knuckle rolls.
The family behind the name
The name recalls founder Xiong Mingyue (熊明月), whose bent back gave rise to the local nickname luoguo (罗锅). His grandson Xiong Jinghui (熊景辉) told Xinxiang Daily that Xiong learned the braising trade from a relative and opened his own pot near the Wei River (卫河) on what is now Xinrong Street (新荣街) in the 1930s.
