Pucheng Silky Lean Pork Soup (濮城滑脊汤) comes from Pucheng Town (濮城镇) in Fan County (范县). Fresh pork tenderloin is coated in sweet-potato starch and egg, then combined with pork-bone broth and a vinegar finish. The tender meat and sour, spicy broth are central to its character.

How it is made

The tenderloin is finely cut and marinated before being wrapped in the starch-and-egg mixture. It cooks gently in plain water until done and is set aside. The soup base is made separately by simmering large pork bones.

Ginger, minced garlic and shredded scallion season the bone broth. Fragrant oil (香油), coriander, specially prepared egg sheet and browned scallion complete the bowl, followed by aged vinegar from the Chen family (陈家) in Fan County.
