Runan Hotpot-Swished Beef Tripe (汝南涮牛肚) is a beef-tripe hotpot from Runan County (汝南县) in Zhumadian (驻马店), Henan, presented by the Runan county government through the Cui Ji Shuan Niudu (崔记涮牛肚) brand.

Where it comes from

Cui Jinwei (崔金伟) founded Cui Ji Shuan Niudu in 1997. The Runan county government describes it as the first restaurant in Zhumadian to build a hotpot around swished beef tripe, where pieces of tripe are cooked briefly in the simmering broth at the table.

How it is made

The restaurant uses its own broth base with a secret seasoning and selected beef tripe. The broth is made with more than thirty tonic medicinal ingredients, among them longan, goji, jujube, clove, tsaoko (草果), amomum (砂仁) and galangal, and is simmered for more than ten hours.

Flavour and texture

The county government describes Runan Hotpot-Swished Beef Tripe as smooth in the mouth and springy, with a bite that keeps its interest as you chew. The broth is thick and full-flavoured, savoury with a sweet finish.
