Four-Flavour Bowl in Hot Broth (四味菜) is a Kaifeng (开封) dish also called siwei huicai (四味烩菜). Its four components are braised beef, cooked meatballs, stewed wheat gluten and daylily buds, brought together in mutton broth.
How it is made
These prepared ingredients are heated together in the soup; Gulou District Government (鼓楼区人民政府) describes the resulting bowl as piping hot and savoury.
How it is eaten
The district places this bowl among the city’s breakfast dishes, served with bread. Local pairings include guokui (锅盔), a flatbread; laomo (烙馍), a thin griddle bread; and shaobing (烧饼), baked buns. The district's food guide names Liji (李记) among local makers of the dish.
