Wuzhi Toasted Flour Drink 武陟油茶
Wuzhi Toasted Flour Drink is featured among the local specialties of Henan.

Wuzhi Toasted Flour Drink (武陟油茶) is a flour-based specialty of Wuzhi County (武陟县), flavoured with sesame, peanuts, walnuts and aromatic spices. Mixed with water, the prepared powder becomes a coffee-coloured, milky-textured drink with a rich flavour and a balance of saltiness and sweetness.
How it is made
The flour mixture is steamed for about forty minutes, cooled, broken up and sieved. Sesame seeds are toasted dark yellow and crushed. Peanuts are fried, cooled, skinned and broken into small pieces, while walnut kernels are crushed separately.
Flour is stirred over low heat until fragrant. Sesame oil is added in three stages, followed by the peanuts, sesame, walnuts, salt and spice powder. The seasonings include star anise, fennel, Sichuan pepper, cloves, galangal, cinnamon, tsaoko, dried tangerine peel and amomum. A few more minutes of stirring produces the finished drink powder.
How it is eaten
To prepare a bowl, first mix a little warm water into the powder to make a paste, then pour in boiling water while stirring in one direction. Another method starts with a cold-water paste, which is stirred into boiling water and briefly brought back to a boil.
